Local fave Rustic Canyon in Santa Monica is rounding out its only-the-best ethos by revamping its cheese and espresso agenda. Owner Josh Loeb explains that cheese-buying protocol and storage issues got in the way of the restaurant’s dairy ambitions, but now that Andrew’s Cheese Shop opened, it’s like having their own private source down the street. Says Loeb, “We can rotate them more frequently and have [owner Andrew Steiner] educate our staff.” Expect the program’s emphasis to be on local California cheeses, samples from artisanal makers around the country, and a few European cheeses to complete the compare-and-contrast tasting experience.
